Metro Cooking Class: Cooking with Cabbage

A wagon of cabbages at Tipi Creek.On Wednesday, March 9, 2016, I’ll be leading a class called Cooking with Cabbage for Metro Continuing Education.

Admittedly, this class does not sound as sexy as, say The Flavours of Exotic Thailand, or How to Stalk, Kill, and Cook a Wild Animal to Feed your Family, but check out this course description:

Most people would not consider the humble cabbage a rock-star vegetable. Chef Allan Suddaby begs to differ. Learn how to turn this root-cellar staple into superlative classics like German-style coleslaw, braised red cabbage and of course cabbage rolls. Chef Allan will also demonstrate how to cure your own sauerkraut at home and share some delicious ideas on how to eat it (ever had sauerkraut soup?).
