Doughs and Batters


The bread section is paltry, I know.  I hope to expand it greatly some day.


Dumpling-making is an important kitchen skill.  It gives you the power to convert bread crumbs and left-over meat and cold potatoes into delicious, cohesive starches to accompany a meaty braise or broth.

Sweet doughs and batters such as pies, cakes, and doughnuts are discussed in the Pastry Section.
